The Green Gold of Borgo Segine: A Story of Rebirth
The Heart Beyond the Obstacle
It all began on a cold early winter morning. When Mario and Grazia first set foot on the 4.5 hectares of the "Carigregna" estate, they found themselves faced with a wounded giant: a desolate expanse of centuries-old olive trees, tired and unproductive.

They had been searching for years for the ideal place to establish our farm; that day, looking at those withered trees, they understood that their mission was not just to build walls, but to restore life to a land. On October 27, 2013, after three years of constant care, we celebrated our first real victory: a slow harvest, strictly by hand, which yielded just 490 kg of pure oil.
But the challenge had only just begun. The arrival of Xylella fastidiosa hit Salento hard, wiping out millions of trees, including ours.


Our Response: Organic and Hope
Faced with the drying up, we didn't give up. For us, oil isn't a product you buy: it's a family heirloom to be cherished.
In 2021, we chose to start from scratch, completing the replanting in 2025 with the Leccino and Favolosa (FS-17) cultivars, both hardy and vigorous varieties.
At the same time, we embraced Organic Farming Certification. It's not just a seal, but a promise of purity for our guests: we farm without synthetic chemicals, respecting the ecosystem you'll walk through during your stay.
An Experience for the Senses
While awaiting the great 2027 harvest from the new plantations, we continue to produce with absolute dedication from our historic lands.
Ours is a supply chain of excellence:
Harvest: First week of November, strictly by hand.
Pressing: Cold-pressed at our cooperative, within just 3 hours of harvesting.
The result is a sensory-rich high-altitude extra virgin olive oil, which we are pleased to offer you at the table:
On the nose: Medium-intense fruitiness, with fresh notes of freshly cut grass and hints of artichoke.
On the palate: Balanced, with a light and pleasant tingle aftertaste: this is the hallmark of biophenols, the powerful natural antioxidants that protect your heart.
